- 500 g potatoes
- 2 - 4 slices CTC Streaky or other bacon, chopped * * *
- 1 large onion, finely chopped
- 240 ml water
- 30 g butter
- salt and freshly ground pepper, to taste
1.) Melt the butter in a pan. Add
the chopped onion and bacon and fry for 2-3 minutes.
2.) Peel and slice
the potatoes and add them to the pan. Season with salt and pepper and add the
water to cover the potatoes. Put the lid on and cook slowly for 1.5 hours. Stir
occasionally to prevent the potatoes sticking to the pan.
4 - 6 CTC Old Country Cottage Sausages * * *
1 large Onion
OXO Beef Stock Cube * * * (or beef drippings)
Pinch or two Sage and
Salt and Pepper
1.) Peel and slice the potatoes
and peel and chop the onions.
2.) Dice the sausages.
3.) In a baking dish
put a layer of potatoes, a layer of onions and a layer of sausage.
Season to taste and sprinkle over half the herbs.
5.) Continue the layers
until you have used up all the ingredients, ending with a layer of

7.) Dissolve the stock
cubes in hot water as per pkg. instructions and pour into the baking
8.) Bake in a medium oven, 350F, for 40 minutes.
Recipe can be altered to your choice of ingredients of
bacon, sausage, sausage meat, beef or lamb.
