Ulster Fry-Up

(Serves two people)

  • 4 CTC Dubliner Irish Sausages (two per person)
  • 4 CTC Irish bacon (two slices per person)
  • 1 ring or 4 slices CTC Black Pudding (two slices per person)
  • 1 ring or 4 slices CTC White Pudding (two slices per person)
  • 4 Eggs
  • 4 Medium or Grape Tomatoes
  • 4 Boiled (Cold) Potatoe
  • 1 Can Heinz Beans (H.P, Marks & Spencer or Branston may be substituted)
  • White Pepper
  • Fresh Ground Black
  • One Tbsp. Butter
  • ½ Cup Sliced Mushrooms

1) Over a medium heat, fry the bacon until it’s done the way you like. Remember CTC bacon goes crisp quite easily.

2) Place the cooked bacon aside keep hot.

3} Place the sausages on the frying pan and cook till golden brown all around. Set aside and keep hot.

4) Empty contents of can of beans in to a small saucepan and place on low heat.

5) Slice the puddings and place in the frying pan. Need only to be warmed. Remove from pan and set aside.

6) Cut the tomatoes in to quarters and place on pan also. Mushrooms and any other sides can be added at this time.

7) Fry hash browns or you can make boxty. You can also use CTC Irish Potato Cakes. Just fry lightly and add butter.

8) Place in the oven and keep hot.

9) Finally, fry the eggs as you prefer over easy or sunny side up.

10) Brown toast lightly buttered.

11) Now assembly the Irish fry-up on your plates and serve while hot. Salt and pepper to taste.

12) This breakfast is great washed down with Irish Barry’s or Bewley’s tea and served with brown bread.
